The civet coffee is the most valued in the world and its price is as high as its scarcity : no less than 50 € per cup in some restaurants!!!
Its originality lies in the way its very particular treatment is carried out. Indeed, the civet is a small mammal that consumes the coffee-tree fruits but digests only the pulp. The bean, rid of its bitterness and enriched with aromas modified by the digestion is then collected by the small Indonesian and Philippine producers… in the faeces…. (the icing on the cake?…) anyway an invitation from lady nature to persevere towards quality. Obviously, the quality research in the field of coffee is very trendy and offers the good direction towards a greater incidence in terms of value on the global economy.
